Rubio’s to Offer Free Chips & Guac July 31st
It’s no secret I’m a fan of Rubio’s Coastal Grill. The fast-casual cafe continues to grow as more locations pop up and I love that they keep up with new menu trends. I tend to go for plant-based over meat dishes, and Rubio’s makes that super easy. They just added cauliflower rice and had a seasonal feature with Impossible Meat earlier this year.
This Saturday, July 31st, is National Avocado Day and Rubio’s is ready to celebrate. With any order placed tomorrow, you’ll get a free side of their fresh guacamole and chips. Rubio’s guacamole is made onsite daily, using rich Hass avocados, cilantro, garlic, lime juice, and natural sea salt. Their tortilla chips are also prepared fresh every day with a light sprinkling of all-natural sea salt.
What to order to score your free chips and guac? Here’s a few of my go-to’s whenever I make a Rubio’s run. These items are from their gluten-friendly menu but always make sure to request corn tortillas if ordering gluten-free! (Which is another reason I love them. They’ve got you covered for various dietary needs.)
Mango Wild-Caught Mahi Mahi Taco Plate
Wild-Caught Mahi Mahi, grilled or house blackened, topped with citrusy mango salsa, fresh guacamole, cabbage, and creamy chipotle sauce on a warm flour tortilla or stone-ground corn tortilla.
I love their Mahi blackened, and usually order the Mexican rice with black beans as my side.
Salsa Verde Shrimp Taco Plate
I don’t know what it is about the salsa verde shrimp tacos. They are one of my favorite tacos from anywhere. Although I love a lot of their menu choices, it’s always hard for me to stray from this plate. Sustainable, grilled shrimp is topped with salsa verde, sliced Hass avocado, melted cheese, creamy chipotle sauce, cilantro/onion mix, and cabbage.
The shrimp is always consistent and the toppings blend so well. I’ll admit, there have been those days that I order a two taco plate but add in a third a la carte!
